Even with Colorado snow falling in May, summer is right around the corner here in Denver. That means that food truck season is upon us!
With our 300 days of sunshine, there’s plenty of time to get outside and try some fresh flavors during the warmer months. Cater2.me works with three Denver food trucks doing just that. They’ve whipped up fresh new summer menu items that you can sample at your office or out in the summer sun.
Indian/Latin Fusion
We’ve partnered with the CDXX team for the past five years. We love them because they create fun and delicious food concepts that our clients love. So it should come as no surprise that we’re super excited about their newest concept, Roxie’s Tacos. This Indian/Latin fusion menu features curries with fresh, citrus slaws on soft, hand-made tortillas. It’s healthy, vegan-friendly, mostly gluten-free, and very tasty. What’s not to love? You’ll find this delicious menu at the Cherry Creek Farmers Market on Saturdays all summer long – or at your office.
Seafood
Just because you’re in Colorado, that doesn’t mean you have to skip out on seafood. East Coast Joe’s has a top-notch menu of all your coastal favorites, like their famous lobster roll. Joe flies in his bread and seafood from back east and makes everything else in-house. Another of Joe’s most popular summer items, already a hit with our clients, are his stuffed avocados. These are available with chicken or shrimp salad. You can’t go wrong.
Keep an eye out for Joe’s newest concept, Bao Chicka Bao Bao, an Asian-inspired, bao bun food truck. If you’ve never had bao before, imagine delicious steamed bun sandwiches with an array of fillings. We are really looking forward to experiencing this Asian-centric menu when it hits the road mid-summer.
Quinoa
Keenwah, CO brings quinoa to the masses. They give classic comfort foods with big flavors a healthy touch. Their black bean sliders, buffalo chicken bites, and mac ‘n’ cheese all incorporate quinoa. And you can enjoy any of their menu items as a wrap, bowl, or salad. Don’t forget dessert: they bake delicious quinoa chocolate chip blondies.
East Coast Joe’s and Keenwah, CO, will be at Civic Center EATS throughout the summer. This terrific event brings over twenty food trucks to Civic Center Park on Tuesdays, Wednesdays, and Thursdays, from May until October.
